Easy Campfire Breakfast Skillet
What You'll Need:
1/2 onion, chopped
6 eggs, beaten
4 cups potatoes, peeled and diced
1 cup sliced bacon
1 cup shredded cheddar cheese
Cook bacon in a cast iron skillet over low heat until desired doneness. Remove from the pan and store. Add onion and potatoes to skillet and cook in hot bacon grease for 10-12 minutes or until potatoes are tender.
Return the bacon to the pan and add the eggs. Cover and cook until eggs are set, 23 minutes.Sprinkle with cheese and allow to melt before slicing and serving.
Delicious Breakfast Burritos
What you need:
12 eggs
1 small can green chiles
2 cups grated cheddar cheese
1 cup frozen hash browns
1 cup cooked ham, diced
1/4 cup chopped coriander
1 Tablespoons Taco Seasoning
1/2 tablespoon Olive Oil
8 pieces 12-inch flour tortillas
Heat olive oil in a large skillet and cook croquettes and ham, stirring occasionally, 8-10 minutes or until cooked through. While you wait for it to cook, in a large bowl, beat the eggs. Stir in the taco seasoning. Add the eggs to the cooked hash browns and ham and cook until set.Add chiles, cheddar cheese and cilantro.
Place 1/8 of the egg mixture within the center of every hotcake and roll up sort of a dish. Wrap in foil and store in Ziploc brand bags until ready to cook. When finished, heat over campfire embers until heated through (time will depend on how hot your fire is).
Open the foil and permit to chill for many minutes before serving.
